I've no idea why they have left a gap like that, its such an odd thing to do, you could do with tracking down the people who did this and ask them just in case there is something peculiar about the roof.
As for covering it, I think if you just plastered over the gap it would be forever cracking. You could get a joiner to make you a length of softwood shaped to fit the angle of the roof and bond that in place. Once painted with emulsion it will blend in with the ceiling plaster.
