Any tips to avoid paint going on the carpets when painting skirting boards?

Yes, get a wide masking tape, lay it along the skirting so that there is a few mm resting up the skirting. Press the tape onto the carpet then push the excess down between the carpet and the skirting. This should create a definite hollow and all the carpet should be covered by the tape.

Don't leave the tape on too long as the glue can mark the carpet after it has been on for a few days.

Hope that helps.
