How would you do a 3 point joint, ie 2 pieces coming together at 90 degrees and a third running at 90 degrees to the other two pieces

do you mean like a leg ??? ???
if so you cut your mortices from both angles to
to meet inside the leg  and you fit the tennons
and 45 degree mitre where they meet inside the
the leg

1: mortice and tenon
2: haunched mortice and tenon
3: haunced mitred mortice and tennon
4: staggered dowels

All depending on where the 3 way joints are and what they are for

depends what its for , there is an evil chinese woodworking joint for cabinets that comprises a secret mitred dovetail with a through wedged tenon on the vertical section......wouldn't ya just love to cut one for fun!!!!!

No thanks...I learn't my lesson at college when, despite the tutors advice, I selected an angled mitred through dovetail ( essentially a compound dovetail) on a four sided tray in walnut.  Managed it in the end but it took far to many trial joints
