Have noticed the plinth boards under the kitchen units are loose, have tried bodging them to stay in place, but they still move.
Does any one have any good ideas to keep them in place?

Find out how they are fixed. Sometimes they have clips on the back that go around the legs of the cabinets. These can break if the boards are kicked.
You could also try fitting wooden blocks to the underside of the kitchen units behind the boards.
