I want to send HD from a sky box to 2 TV's through Cat5 cable.

What is the best way to do it and does anybody have any links?

I remember reading on here about plates for converting from Cat5 to HDMI.

Just google HDMI Baluns.  Loads out there these days!

The ones I have used fit a single wall box either end, one end having a DC power jack as these baluns where powered.

I will try to find a link to the ones we have used......

You mention TWO TV's. If you want both on at once look for a proper HDMI distribution unit. Simple splitters won't allways work with two TVs.
