didnt notice if jases link said but you usualy set your
twin pin gauge to your mortise chisel if you have one
[hand or machine veriety]if you use a normal chisel
you risk breaking it so be carefull[levering out waste]
in the mortice

Dont forget. A mortice chisel is not normally found in DIY sheds. They have parallel sides which are thicker so that as you chip along the mortice the width is always the same. You buy the size of chisel for the width of the mortice and tenon.
The method shown in that ukwoodworking site is the way I cut mortices for many years until I put up a garage 10 years ago and started filling it with dedicated machines.
For speed a series of holes can be drilled to depth then finished off with a chisel.
Never done it that way as old habits die hard although I have used a router for the mortices and squared up the ends with a chisel. The tenons just need a tenon saw making sure the blade stays on the waste side of the line.
Every mortice guage I have seen for years only has one locking screw. The one I had in the past had a small screw to lock the points to the chisel width and use the large screw to lock the head in place.

On the subject of mortice chisels I got some cracking ones at a DIY bricolage shed in France, 8 euros each. Took me less than 2 mins to polish the backs flat and shiny on my good stone. They almost sharpen themselves and they keep a good edge. Made by moben or someone like that. Still plenty of good hand tools available there.
