Virus parasites often use HTML because they can verify email addresses with it. They put image markups in the HTML so that when you open the email the image is requested via the Internet, and the request is logged back at base. Leastways that's what someone told me.
I agree about simple text, but there's no catering for the smartarse brigade who think that they have to write their email in pretty prose.
My email client (The Bat! - see
http://www.ritlabs.com) automatically switches HTML into simple text. And also replaces any images requested in HTML with placeholders. No scripting language in The Bat for virus writers to get excited about.
